Cauliflower with Egg

Cauliflower with eggs is a very quick recipe, ready in literally 20 minutes. I complete it with a generous sprinkling of spring onions and/or coriander leaves. Just five ingredients and a few spices make this a power-packed side to adorn your table!

Steps to the Cauliflower with Eggs

Buy white, “curdy” cauliflowers. Wash the cauliflower florets well. See the tips mentioned in the golden cauliflower recipe for washing and soaking them.

Now add two tablespoons of oil to a hot pan and drop the florets in. Let them get well-coated in the oil. Add the turmeric. You can add chilli powder too, but today I am adding only turmeric powder, as I want to add ground pepper to give it a variation in taste.

Cook florets with a bit of oil.

Don’t add water. Cover and cook. In 8-10 minutes, the florets would be almost cooked. The cauliflower will be dry. In case there is any water, discard.

At this point, add salt, freshly ground pepper and two eggs. Stir fry till all the florets are coated with the egg. Finally, add the greens. Since I had some spring onions, I used them. You can use a mixture of spring onions and/or green coriander leaves.

Put in the spring onions and keep frying

The cauliflower dish with eggs is almost ready. Keep the heat low and fry till you see a golden colour on the florets. Check the seasonings and adjust to taste.

Serve hot with roties or a rice dish.

An appetising and quick side, ready in minutes. The golden colour on the cauliflower contrasts well with the greens.

Ingredients

  • 1/2 kg cauliflower florets, washed and drained

  • 2 tbsp oil

  • 2 eggs

  • 1 tsp turmeric powder

  • 1 tsp pepper powder

  • 1 tsp salt

  • a small bunch of spring onions

  • coriander, chopped

Directions

  • Heat pan and add oil.
  • Put the florets in the oil. Stir well. Cover and cook on low heat.
  • Add salt, freshly ground pepper and two eggs. Stir fry till all the florets are coated with the egg.
  • Finally, add the greens and fry well.

Notes

  • This dish cannot be frozen
