½ cup coriander leaves, cleaned
¼ cup coconut, chopped or grated
½ inch tamarind
Heat oil in a pan.
Add mustard seeds and let it crackle.

Let it cook for 5 minutes, covered.
Now add the coriander and the coconut. Cook for a further 5 minutes.

You can asubstitute urad daal for channa daal. Or add both. You can also add roasted peanuts.
You can add a pod of garlic with the onion.
You can leave out the coriander leaves. Or add mint leaves instead.
You can add small onions instead of one big.
You can change the quantity of coconut, or even leave it out.
If you do not have curry leaves, you can leave it out.
Also you can add a tadka of mustard and curry leaves in sesame oil on top of the prepared chutney.
